DATE NUT LADOOS

Ingredients
1.5 cups of dates
2-3 tablespoons of water (for grinding dates)
1/4 cup pistachios
1/4 cup walnuts
1/4 cup almonds
1/4 cup cashews
2 teaspoons of Nanak Ghee, divided
A pinch of salt (not traditional, but this makes the ladoos taste like salted caramel)
3 tablespoons of almond flour
1 cardamom pod, seeds powdered
Additional Nanak ghee for greasing hands
Garnish
Edible rose petals
Chopped Pistachio
METHOD TO PREPARE
Soak 1.5 cups of dates in warm water for about 15 minutes. Drain the dates and blend them into a smooth paste with 2-3 tablespoons of water. Set aside.
Heat 1 teaspoon of Nanak Ghee in a pan over medium heat. Add pistachios, walnuts, almonds, and cashews to the pan. Roast until lightly golden and fragrant, about 3-5 minutes, then transfer to a bowl to cool. When cool roughly chop with a small pinch of salt.
In the same pan, add another teaspoon of Nanak Ghee and the blended date paste. Cook, stirring constantly, until the paste becomes glossy. About 5 minutes.
Transfer the cooked date paste to a large mixing bowl. Add the roasted, chopped nuts, 3 tablespoons of almond flour, and powdered cardamom seeds. Mix until uniform.
Grease your hands with a little ghee and take small portions of the mixture to roll into balls.
For additional flair, roll the date ladoos in edible rose petals and pistachio. This makes them look so fancy.
The Date Nut Ladoos are ready to be served and can be stored in an airtight container in the fridge for up to a week.
