MAKHANDI HALWA

Ingredients

Semolina (Suji) – 1 cup

Full-fat Milk – 2 cups

Ghee (Clarified Butter) – 1 cup

Sugar – 1 cup

Cardamom Powder – ½ tsp

Mixed Nuts – 1/4 cup (almonds, cashews, raisins)

Chopped pistachios, for garnish

METHOD TO PREPARE

In a bowl, combine 1 cup of semolina with 2 cups of milk. Mix well and let it soak for about 30 minutes.

In a heavy-bottomed pan, heat 1 cup of ghee over medium heat. Add nuts and roast them until golden in color and aromatic.

Once done, keep aside.

In the same pan and ghee, add 1 cup of sugar and stir continuously until the sugar melts and turns a golden brown color.

Carefully add the soaked semolina and milk mixture to the caramelized sugar. Stir continuously to prevent lumps.

Cook on low heat until the mixture thickens, the ghee separates, and the halwa attains a rich brown color.

Add in ½ tsp of cardamom powder and roasted nuts. Mix well.

Transfer the halwa to a serving dish. Garnish with chopped pistachios.
