Ingredients
For Jaggery Syrup
1 ½ cups Water,
250 gm Sugar,
100 gm jaggery powder
½ tsp Fennel seeds,
few Cardamom seeds
For Gur ke Chawal
1 tbsp Ghee, घी
15-20 Raisins, किशमिश
40-50 gm Dried fruits,
1 1/2 cups Basmati rice, soaked for 20 minutes
2 cups Water,
2 to 3 cloves and 2 to 3 cardamom pods - crushed
a pinch of turmeric
a pinch of salt
METHOD TO PREPARE
Process for Jaggery Syrup : In a deep bottom sauce pot, add water, sugar, jaggery, fennel seeds, cardamom seeds, and cook on medium flame. Keep cooking until the jaggery completely melts.
For Gur Ke Chawal In a deep pot, add ghee, raisins, and dried fruits, and sauté on medium flame until the raisins puff. Add the basmati rice and sauté it well for a minute. Add water and mix it well. add 2 to 3 cloves and 2 to 3 cardamom pods, crushed, a pinch of turmeric, and a pinch of salt
Cover it with the lid and cook on medium flame up to 70 %. Now, add the prepared jaggery syrup and mix it well. Cover it with a lid and cook on a medium flame. Once the rice is cooked, switch off the flame.
Garnish it with pistachios, rose petals, and sliced almonds, and serve hot .
