EGGLESS FRENCH TOAST
6 slices of bread, use stale bread for best results
1 cup full-fat coconut milk, unsweetened
1.5 tsp all-purpose flour
2 tbsp sugar (adjust to taste)
1/4 tsp green cardamom powder
A pinch of salt
2-3 tbsp Nanak Ghee (for frying)
Maple syrup (for serving)
METHOD TO PREPARE
In a mixing bowl, whisk together coconut milk, flour, sugar, cardamom powder, and salt until smooth. The batter should be thick enough to coat the back of a spoon but not too heavy. If it's too thick, add a splash of water or more coconut milk to adjust the consistency.
Heat a non-stick pan or skillet over medium heat and add a teaspoon of ghee. Let it melt and coat the surface evenly.
Dip each slice of bread into the coconut milk batter, ensuring it's well-coated on both sides. Shake off any excess batter to prevent sogginess.
Place the coated bread slices on the heated pan. Cook for 2-3 minutes on each side or until golden brown and crisp. Add more ghee as needed when flipping the slices.
Stack the French toast on a plate and drizzle generously with maple syrup. Serve with fruits if desired.
