MEXICAN PANEER CORN SALAD

Ingredients

2 cups roasted corn kernels

1/4 cup chopped onion

1 tbsp lemon juice

1 tbsp vegan mayonnaise

1/2 tbsp Nanak Dahi (vegan yogurt)

1/2 cup chopped cilantro

1 jalapeno pepper (finely chopped)

Salt to taste

1 tsp paprika

1 cup grated Nanak Paneer (vegan paneer)

METHOD TO PREPARE

  • In a large bowl, combine the roasted corn kernels, chopped onion, lemon juice, vegan mayonnaise, Nanak Dahi, cilantro, and finely chopped jalapeno.

  1. Season:

    • Add salt to taste and sprinkle in paprika. Mix everything together until well combined.

  2. Add the Paneer:

    • Gently fold in the grated Nanak Paneer and mix again to incorporate.

  3. Serve:

    • Enjoy your fresh, flavorful roasted corn and paneer salad immediately as a snack or side dish!
