Chipotle Pineapple Paneer Skewers

Ingredients
1 package Nanak Paneer, cubed
½ package prepeeled pineapple, cubed
Marinade
3 - 5 chipotle in adobo sauce (adjust based on your spice preference)
2 cloves of garlic
1 tablespoon oil
1 tablespoon maple syrup
Juice of half a lime
3 + 2 tablespoon tablespoons vegan mayo salt
Method to Prepare
If using wooden skewers soak the skewers in water for 10 minutes. Otherwise it will burn on the barbecue.
Blend all the marinade ingredients to a smooth thick paste
Add the paneer and pineapple to a bowl, along with all the marinade. Tosss and coat the til both are well coated. Let it marinate for 15 minutes or upto 2 hours.
Arrange the marinated pineapple and paneer on a skewer (alternating between the 2). Reserve the remaining marinade for dipping sauce.
Grill the skewers on a barbecue or on griddle pan, until you see char marks.
Garnish with chopped cillsntro and serve with the remaining marinade as dipping sauce.
