Chipotle Pineapple Paneer Skewers

Ingredients
1 package Nanak Paneer, cubed
½ package prepeeled pineapple, cubed
Marinade
3 - 5 chipotle in adobo sauce (adjust based on your spice preference)
2 cloves of garlic
1 tablespoon oil
1 tablespoon maple syrup
Juice of half a lime
3 + 2 tablespoon tablespoons vegan mayo salt
Method to Prepare
If using wooden skewers, soak them in water for 10 minutes to prevent burning on the barbecue.
Blend all the marinade ingredients into a smooth, thick paste.
In a bowl, combine the Nanak paneer and pineapple with the marinade, tossing to coat well. Let it marinate for 15 minutes to 2 hours.
Thread the marinated Nanak paneer and pineapple onto the skewers, alternating between the two, and reserve the remaining marinade for dipping sauce.
Grill the skewers on a barbecue or griddle pan until char marks appear.
Garnish with chopped cilantro and serve with the reserved marinade as a dipping sauce.
