Capere Inspired Grilled Paneer

Ingredients
1/4 cup grated Parmesan
1 cup arugula
1 bunch basil
1 clove garlic
1/4 cup toasted pumpkin seeds
1/4 cup olive oil
Salt to taste
2 sliced tomatoes
One (12oz) package of Nanak Paneer sliced ¼ inch thick
4 tablespoons oil to coat the paneer and the grill.
½ teaspoon salt
Balsamic glaze
Method to Prepare
Blend all the pesto ingredients to a desired consistency - smooth or chunky all work.
Slice the paneer, toss it in 2 tablespoons oil and ½ teaspoon salt.
Heat grill pan to medium high heat, brush the pan with the remaining 2 tablespoons oil. This step is important to prevent the paneer from sticking.
Grill paneer on a skillet. About 3 minutes on each side till you have grill marks.
Toss the warm grilled paneer in about ¼ cup pesto
Arrange the pesto coated grilled paneer with tomatoes on a large platter.
Drizzle with balsamic glaze and serve immediately.
