Capere Inspired Grilled Paneer
1/4 cup grated Parmesan
1 cup arugula
1 bunch basil
1 clove garlic
1/4 cup toasted pumpkin seeds
1/4 cup olive oil
Salt
2 sliced tomatoes
One (12oz) package of Nanak Paneer sliced ¼ inch thick
4 tablespoons oil
½ teaspoon salt
Balsamic glaze
Blend all the pesto ingredients to your desired consistency, whether smooth or chunky.
Slice the Nanak paneer, toss it in 2 tablespoons of oil and ½ teaspoon of salt.
Heat a grill pan over medium-high heat and brush it with the remaining 2 tablespoons of oil to prevent sticking.
Grill the paneer for about 3 minutes on each side until grill marks appear.
Toss the warm grilled paneer in ¼ cup of pesto.
Arrange the pesto-coated paneer with tomatoes on a large platter, drizzle with balsamic glaze, and serve immediately.
