INSTAPOT HERB PANEER
1 Paneer Tikki (cut into long strips)
1 tsp dry garlic powder
1/2 tsp dried basil
1/2 tsp dried thyme
1/2 tsp black pepper
1 tsp onion powder
1/2 tsp salt
1 tsp paprika
3 tbsp olive oil (divided)
1 cup vegetable or chicken broth
METHOD TO PREPARE
Prepare the Seasoning:
In a small bowl, mix together the dry garlic powder, dried basil, dried thyme, black pepper, onion powder, salt, and paprika.
Season the Paneer Tikki:
Cut the Paneer Tikki into long strips.
Drizzle 1 tablespoon of olive oil over the paneer strips and toss them in the seasoning mixture until they are well-coated.
Cook in the Instant Pot:
Set the Instant Pot to the “Sauté” function and add the remaining 2 tablespoons of olive oil. Once hot, add the seasoned paneer strips and sauté for 2-3 minutes, just until lightly browned on all sides.
Add the broth and stir well, ensuring the paneer is mixed with the liquid.
Pressure Cook:
Close the Instant Pot lid and set the valve to the sealing position.
Set the Instant Pot to "Manual" high pressure and cook for 8 minutes.
Once the cooking time is complete, allow the pressure to release naturally for 5 minutes, then carefully switch the valve to "venting" to release the remaining pressure.
Serve:
Carefully open the lid, and your paneer tikkis will be soft, flavorful, and ready to enjoy!
You can serve as is, or with your favorite side dishes like cooked rice, vegetables, or wrap it in a tortilla for a delicious filling.
