FIESTA SALAD

Ingredients

1 tbsp oil (for cooking)

1 Paneer tikki (cubed)

1 tbsp vegetable seasoning

1 cup cauliflower (cut into bite-size pieces)

1 long cucumber (cut into rounds, then each round cut into quarters)

1 red bell pepper (cut into small bite-size pieces)

2 celery sticks (cut into small bite-size pieces)

1 apple (cut into small bite-size pieces)

2 lemons (for juice and zest)

1 can chickpeas (drained and rinsed)

1 tsp black sunflower seeds

1/2 cup slivered almonds

Olive oil (for drizzling)

1 tbsp lemon juice (for dressing)

1 tsp Monk fruit sugar (or preferred sweetener)

METHOD TO PREPARE

In a pan over medium heat, Add 1 tbsp oil

1 Paneer tikki cubed

1 tbsp Vegetable seasoning

Cook for few seconds

1 cup Cauliflower cut bite size

1 long Cucumber cut rounds then by 4

1 red bell pepper cut small bite size

2 Celeb sticks cut small bite size

1 Apple cut in small bite size pieces

2 lemons

1 can chick peas

1 tsp Black sunflower seeds

1/2 cup slivered almonds

Olive oil

1 tbsp lemon juice

1 tsp Monk fruit sugar

Mix all of the above ingredients together & pour on dressing.

Serve cold & enjoy.
