CHEESE AND PANEER PIES
2 tablespoons oil
1 cup chopped onions
1/2 cup yellow pepper, chopped
2 teaspoons crushed garlic
2 Thai green chillies, crushed
3/4 cup mushrooms, chopped
3/4 cup spinach, finely chopped
2 teaspoons salt
1/2 teaspoon turmeric1 bouillon cube
12 oz Nanak paneer
1 tablespoon cornflour mixed with 2 tablespoons milk (slurry)
1 teaspoon black pepper
4 tablespoons milk
1 1/2 tablespoons cornflour
1 1/2 cups grated cheese
2 x 450g puff pastry sheets, defrosted
3 tablespoons milk (for basting)
METHOD TO PREPARE
Preheat the oven to 350°F (175°C).
Cut the block of paneer into 4 pieces and soak in hot water for 10 minutes to soften.
Heat oil in a pan over medium heat.
Add chopped onions and yellow pepper; cook for 7–10 minutes or until golden brown.
Stir in garlic and cook for 1 minute.
Add green chillies, mushrooms, spinach, salt, turmeric, and crumbled bouillon cube. Cook for 5–6 minutes.
Drain and crumble the softened paneer. Add to the pan with the cornflour slurry. Stir well to combine.
Remove from the heat and let the mixture cool completely. Once cooled, mix in black pepper, cornflour, and grated cheese.
