CHOCOLATE LOAF
1½ cups all-purpose flour
1 cup granulated white sugar
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon instant coffee
1/4 teaspoon salt
1 cup Nanak Dahi
½ teaspoon apple cider vinegar
½ cup canola oil or any flavorless oil
1 teaspoon vanilla extract
2 tablespoons hot water
Melted chocolate
1 cup dark chocolate chips
2 tablespoons coconut oil
Cacao nibs or chopped nuts for garnish
METHOD TO PREPARE
Preheat the oven to 350°F. Grease and line a loaf pan with parchment
In a large bowl, sift together flour, cocoa powder, baking soda, coffee, and salt. Add sugar and whisk to combine all dry ingredients.
In the same bowl, add 1 cup yogurt, vinegar, oil, vanilla extract, and hot water. Stir to combine.
Pour the batter into the prepared loaf pan and bake for 30-35 minutes until it is done or till a toothpick inserted in the center comes out clean.
Remove from oven, transfer to a wire rack, and let the loaf cool completely
Melt the chocolate chips over a double boiler along with some coconut oil. Once the chocolate has melted, drizzle it over the cake and decorate with cocoa nibs or chopped nuts.
