CHUTNEY PANEER CHEESE SANDWICH

Ingredients
1 block of paneer
1 block of cream cheese
1 teaspoon garlic powder
1 teaspoon chili flakes
1 teaspoon Italian herbs
Salt and pepper, to taste
2-3 tablespoons milk
1 cup fresh Green Chutney
1 loaf of white bread, crusts removed
2 English cucumbers, washed
METHOD TO PREPARE
Combine the paneer, cream cheese, garlic powder, chili flakes, Italian herbs, salt, and pepper in a blender. Blend until smooth. Adjust the consistency with milk as needed, adding one tablespoon at a time.
Thinly slice one cucumber, or use a Y-peeler to peel it into thin strips.
Remove the crusts from the bread or use crustless bread (as shown in the video).
Spread a thin layer of green chutney on one side of the bread. Top with a layer of the paneer cheese spread. Arrange cucumber slices on top, either horizontally or diagonally if serving open-faced.
Cover with another slice of bread smeared with green chutney, or leave it open-faced. Cut into desired shapes.
Place the sandwiches in the fridge for at least 30 minutes to allow the spread to thicken and set.
Serve cold with a cup of hot chai and enjoy the refreshing flavors!
