PANEER ARRABIATTA

Ingredients

¼ cup olive oil

1 medium yellow onion, minced

6 cloves garlic minced

2 teaspoons red pepper flakes

½ block of paneer, grated

1 tablespoon tomato paste

1 can san marzano tomatoes, chopped

1 bay leaf

Salt and pepper to taste

Basil leaf

1 pound whole wheat spaghetti

METHOD TO PREPARE

Heat a large pan over medium heat. Add olive oil and sauté the onion with a pinch of sea salt until translucent, about 10 minutes. Add the bay leaf, garlic, and red pepper flakes and let it cook only for a few seconds until it is fragrant (you don’t want to brown it). 

Add the gated paneer and let it cook for 2 minutes. 

Add tomato paste and sanmarzano tomatoes and let it simmer for 10 minutes. 

While the sauce is cooking. Cook the pasta as per the package instructions. Reserve a cup of pasta water. Drain and add the spaghetti and the pasta water to the sauce. Stir and serve with parmesan and pepper.
