PANEER PIZZA SANDWICH

PANEER PIZZA SANDWICH

Ingredients

1 block paneer, cut into small cubes

2 teaspoons olive oil

2 pints mushrooms, sliced

3 cloves garlic, finely chopped

2 cups pizza sauce

1 teaspoon oregano

½ teaspoon garlic powder

½ teaspoon chilli flakes

½ teaspoon crushed black pepper 

2 big handfuls spinach

Mozzarella Cheese, grated

8-10 slices of whole wheat sourdough bread, or whatever you have on hamd

Basil leaves

METHOD TO PREPARE

Heat a pan over medium heat.

Add oil. When hot, add in the mushrooms and let them cook for 5-7 minutes until all the water has evaporated, stirring occasionally.Next, add in the garlic and cook for about 30 seconds until fragrant.

Add in pizza sauce and all of the spices. Stir and cook for 3 minutes.
Add in the spinach and stir. Remove from heat when all the spinach has wilted.

Top a slice of bread with the mushroom paneer pizza filling, using about 2 tablespoons. Press it down gently.

Top with grated cheese and basil leaves. Close with another slice of bread.

Cook on a hot pan with butter. Place a weight on top to allow for uniform browning.

Flip and repeat the process.

Remove from heat, slice, and serve with more pizza sauce.
