PANEER SCHEZWAN SLIDERS
1 tablespoon oil
½ block of paneer cut into cubes
1 small onion, finely chopped
3-4 cloves of garlic, finely chopped
⅕ red pepper, chopped into small cubes
½ yellow pepper, chopped into small cubes
½ cup frozen corn, thawed
2-3 tablespoons, schezwan chutney (adjust based on your spice level)
Schezwan Mayo-
¼ cup mayo
2 tabelspoons schezwan
Scallion Butter-
3 tablespoons butter, melted
1 teaspoon sesame seeds
4-5 scallions, finely chopped
12 Brioche buns
Cheese slice
Preheat 400F
METHOD TO PREPARE
Heat a pan add a a tablespoon of oil.
When hot add in onion and garlic and sautee till it is fragrant
Next add in peppers add saute for a few more minutes till peppers just begin to soften but still hold shape. Add in corn and sautee for another few minutes.
Next add in schezwan chutney then add in the paneer. Mix till everything is well combined.
Make the schezwan mayo (schezwan chutney + mayo) and then spread it on the brioche bun
Then top the filling and then layer with sliced cheese.
Top with the other slider. Brush with scallion butter.
Top with foil and bake 30 minutes.
