ROASTED VEGGIE SANDWICHES
Nanak Paneer cut in thin slices
Eggplant
Zucchini
Onions
Bell peppers Green & Red
3-4 tbsp Olive oil
Vegetable seasoning
2 types of Cheese (jalapeño & cheddar)
Portuguese buns
Mayonnaise eggless
METHOD TO PREPARE
Cut all vegetables, eggplant rounds, zucchini rounds, onions sliced in large pieces & bell peppers large flat chunks. Coat vegetables & paneer with olive oil & vegetable seasoning. Roast paneer & vegetables one at a time in the oven until soft. (Use parchment paper to line baking sheet).
Spread mayonnaise on each side of the Portuguese bun generously. Add one type of cheese on each side. Toast until cheese melts. Take out & layer all paneer & veggies, paneer first, followed by eggplant, zucchini, then bell pepper & onions. Press the sandwich top firmly on the bottom. Hear the crispiness. Put a toothpick on each side & cut in half to serve.
Enjoy!
Sandwiches can be wrapped to eat later. They can be eaten cold or warm. Warming a sandwich in an air fryer for 2 minutes works beautifully & tastes so fresh!
