TOMATO CHUTNEY PANEER SANDWICH
For the Paneer:
200g Nanak paneer, sliced into ¼-inch thick slabs
½ tsp red chilli powder
¼ tsp turmeric powder
½ tsp garlic powder
½ tsp black pepper
½ tsp garam masala
½ tsp salt (adjust to taste)
2 tsp lemon juice
1 tbsp oil for frying
For the Sandwich:
4 slices of toasted bread (white, whole wheat, or sourdough)
2 tbsp tomato chutney
½ cucumber, thinly sliced
½ small red onion, thinly sliced
A handful of fresh microgreens (or baby spinach)
Chaat masala, to sprinkle
METHOD TO PREPARE
Place paneer in a bowl. Sprinkle red chilli powder, turmeric, garlic powder, black pepper, garam masala, and salt. Add lemon juice. Coat the paneer slices evenly with the spice mix.
Heat oil in a non-stick pan over medium heat.
Pan-fry the spiced paneer for 1–2 minutes on each side until golden and lightly crisp. Set aside.
Toast the bread slices in a toaster or toaster oven until golden brown.
Spread tomato chutney on one side of each toasted bread slice.
On two slices, layer cucumber, onion slices, the fried paneer, a generous sprinkle of chaat masala, and a handful of microgreens.
Top with the remaining slices, chutney side down.
Slice diagonally and serve warm!
