CRISPY SOOJI SANDWICHES
2 cups Sooji (Semolina)
1/3 cup Dahi (Yogurt)
1 onion, finely chopped
1/2 cup chopped mushrooms
2 tomatoes, finely chopped
1 can corn (drained)
2-3 green onions, chopped (green parts only)
1 red bell pepper, finely chopped
1 green bell pepper, finely chopped
1 tsp salt (adjust to taste)
1 tsp crushed black pepper
Chili flakes to taste
2-3 green chilies, finely chopped
Vegetable seasoning (optional, or as per your taste)
Water (as needed)
METHOD TO PREPARE
Prepare the batter:
In a large mixing bowl, add 2 cups of Sooji (semolina) and 1/3 cup of Nanak Dahi.
Add the chopped onion, mushrooms, tomatoes, corn, green onions, red bell pepper, and green bell pepper to the mixture.
Add 1 tsp salt, 1 tsp crushed black pepper, chili flakes (to your preferred spice level), and finely chopped green chilies.
Season with vegetable seasoning, if using.
Mix everything well to combine.
Let it set:
Add water to the batter as needed to achieve a thick, pancake-like consistency. Start with about 1/2 cup of water and adjust as required.
Allow the batter to set for 15 minutes to help the semolina absorb the yogurt and water, making it soft and fluffy.
Cook the batter:
Preheat your sandwich maker or grill. Grease the plates lightly with oil or butter.
Pour the batter onto the sandwich maker, filling it up evenly.
Close the sandwich maker and cook for about 10 minutes, or until the batter is cooked through and slightly golden.
Serve:
Once cooked, carefully remove the savory sandwich from the sandwich maker.
Serve hot with green chutney or any dip of your choice.
