Thayir Sadam or Yogurt rice

Ingredients
3 cups warm cooked white rice like sona masoori
1 teaspoon salt
1 tablespoon butter
1 tub (750 g) Nanak Dahi yogurt (adjust as you need)
Tempering
1 teaspoon neutral oil
1 teaspoon mustard seeds
1 teaspoon urad dal
1 tablespoon grated ginger
1-2 green chilli
Garnish
1/2 small pomegranate
Half a cup shredded carrot
Half cup rough chopped cilantro
Method to Prepare
Add rice to bowl, along with salt and butter.
Mix it well using your clean hands (if it is too hot use a ladle). You want to mash and soften the rice up. This gives the yogurt rice a uniform consistency.
Stir in yogurt and mix till everything is combined
Prepare the tempering, in a small pan heat 1 teaspoon oil. When the oil is hot add mustard seeds. Once the mustard seeds being to pop quickly add the remaining ingredients - urdad dal, generous pinch of hing, ginger, and green chillies Stir and cook until aromatic about a minute.
Add the tempering to the yogurt rice and mix till well combined. It is recommended to let it chill in the fridge for and hour two.
Garnish with cilantro, carrot and pomegranate before serving.
