AIR FRYER SCHEZWAN PANEER

Ingredients

1 block Nanak paneer cut into ½ inch cubes

2 tablespoons cornstarch

1 teaspoon red chili powder (adjust to taste)

½ teaspoon salt

Cooking spray

2 tablespoons of oil

4 scallions (sliced, whites and greens separated)

3 cloves garlic (minced)

1 inch ginger (minced)

1 green chili minced (deseed if you like less spice or skip)

3 tablespoons low-sodium soy sauce

2 tablespoons Schezwan chutney (adjust to taste)

1 tablespoon maple syrup


Garnish

Toasted sesame seeds

Scallion greens

Method to Prepare

In a large bowl, mix together the cornstarch, chili powder, and salt.

Add the cubed paneer to the bowl and gently toss to coat evenly. (presoaking the paneer in warm water is an additional step but keeps the paneer soft)

Preheat the air fryer to 400°F (200°C).

Spray a little cooking spray at the bottom of the basket.

Arrange the coated paneer cubes in the air fryer basket in a single layer, ensuring they’re not overcrowded. You might need to cook them in batches.

Air fry for 12-15 minutes, or until the paneer is golden and crisp, shaking the basket halfway through for even cooking.

Heat a non-stick frying pan over medium heat. When hot, drizzle in oil. When the oil is hot add in the scallion whites. Then toss in ginger, garlic, and green chili. Mix and let it cook for a minute until everything is fragrant.

Add in all the sauce elements - soy sauce, Schezwan chutney, and maple syrup. Add about ½ cup water and let the sauce come to a simmer. Toss in the paneer and mix to coat every cube with the sauce.. Remove from heat.

Transfer the Schezwan paneer to a serving dish.

Garnish with the sliced green parts of the scallions.

Serve hot as a delightful appetizer or snack with a drizzle of sriracha mayo.
