CREAMY FRUIT SALAD
Fruits:
1 pear, not soft
1 small apple
1 small mango
½ cup grapes
4 large strawberries
1 can mandarin oranges, drained with the juices lightly squeezed out
Maraschino or fresh cherries
You can also use any variety of fruit available, except pineapple and kiwi, as they would cause the whipping cream to curdle.
Creamy Yogurt Base:
1 cup whipping cream
1 cup Nanak Dahi (yogurt)
1/4 cup honey
3 tablespoons sugar
1 teaspoon crushed cardamom
1 teaspoon vanilla extract
Pinch of salt (to enhance the sweetness)
4 Maraschino or Fresh cherries for garnish
METHOD TO PREPARE
Add the yogurt to a sieve to strain out excess water. Place it over a bowl large enough to allow the water to drip from below and set aside.
Meanwhile, prepare the fruits by cutting them into small cubes.
In a separate bowl, beat the whipping cream on medium-high until stiff peaks form. Do not over-mix.
