EGGLES ZUCHHINI YOGURT LOAF

Ingredients

1½ cups all-purpose flour

1+1/2 tsp baking powder

¼ tsp baking soda

¼ tsp salt

1 tsp ground cinnamon

½ cup plain yogurt

⅓ cup brown sugar

⅓ cup granulated sugar

¼ cup milk

¼ cup neutral oil

1 tsp vanilla extract

1 cup grated zucchini

½ cup chocolate chips

METHOD TO PREPARE

Preheat oven to 350°F (175°C). Grease and line a standard loaf pan (8.5x4.5" or 9x5") with parchment paper.

In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon powder.

In a medium bowl, combine yogurt, sugar, brown sugar, milk, oil, and vanilla. Fold in the grated zucchini.

Add the wet ingredients to the dry ingredients. Gently fold until no streaks of flour remain. Add chocolate chips and mix. Do not overmix.

Pour the batter into the prepared loaf pan. Tap the pan gently on the counter to release any air bubbles and smooth the top.

Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.

Let the loaf cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely. Slice and serve.
