INSTANT UTTAPAM

- Serves:10-12 small uttapams
Ingredients
1 cup sooji or rava
1/2 cup Nanak dahi
1/2 cup water
Salt to taste
½ teaspoon baking soda
Veggies all chopped fine
2 shallots, finely chopped
1 Carrot, grated
1 green chilli, finely chopped
1/2 bell pepper, finely chopped
2 tablespoons coriander, finely chopped
Oil for cooking
METHOD TO PREPARE
In a large bowl, add sooji, yogurt, water, and salt. Rest the mixture for ½ hours. Sooji will absorb the water, and the batter will thicken.
Add in ½ teaspoons of baking soda; this will make the batter fluffy. If the batter is too thick, add a few tablespoons of water. The batter should be of pouring consistency.
Mix all the veggies in a small bowl.
Pour a ladleful of batter and make a small pancake-sized uttapam. Top with the chopped veggies, add a teaspoon of oil around the uttapam, cover, and cook for 2 minutes. Flip it over and cook for 2 more minutes. Remove from the heat and serve hot with sambar or chutney.
Alternately, you can slightly sauté the veggies and add them to the batter, mix it, and make uttappams.
