MANGO MOUSSE
3/4 cup mango pulp (fresh or canned Alphonso/Kesar)
1/2 cup full-fat Greek yogurt (or regular yogurt, strained)
1/2 cup sugar (adjust based on the sweetness of the mangoes)
3/4 cup heavy whipping cream
1/8 tsp cream of tartar (optional, for cream stability)
METHOD TO PREPARE
In a bowl, whisk together the mango pulp, yogurt, and sugar until smooth and fully combined.
Line a bowl with muslin or cheesecloth, and pour in the mango-yogurt mixture and let it hang for 1-2 hours to remove excess liquid.
In a chilled bowl, whip the heavy cream and cream of tartar until stiff peaks form.
Gently fold 1/2 of the whipped cream into the mango-yogurt using a spatula. After it has been combined, add the other half and fold gently until combined. Be sure to use a spatula and light strokes to keep the mixture airy.
Spoon into serving glasses or bowls.
Garnish with toasted coconut, chopped pistachios, edible flowers, or fresh mango pieces and enjoy!
