ONE BOWL PUMPKIN CARDAMOM LOAF

Ingredients
1 cup Pumpkin puree (needs to be measured)
1/3 cup plain Nanak yogurt
½ cup olive oil
¾ cup brown sugar (160g)
1-2 teaspoons vanilla
½ teaspoon salt
5 cardamom pods crushed or ½ teaspoons cardamom powder
½ teaspoon ginger
A few grinds of black pepper
1 teaspoon baking powder
½ teaspoon baking soda
2 cups whole wheat flour (226 grams)
Toppings (optional)
Pepitas
Chopped walnuts
Chopped dark chocolate
Glaze
2 tablespoons of maple syrup
⅓ cup tahini
2 tablespoons water
Pepitas to top
METHOD TO PREPARE
Preheat the oven to 350 F
Lightly grease and flour a loaf pan (81/2 inch or 9 inch will work)
In a large bowl, add all the wet ingredients. Mix until well combined.
Then add the spices and mix until combined. Sift in flour, baking powder, and baking soda, and mix till combined.
Pour the cake batter into the prepared loaf tin and bake for 50 minutes, or until a toothpick inserted in the center of the cake comes out clean. (Pro tip: Ovens vary a lot; it is best to start testing at 40 minutes.)
If you choose to top the loaf with glaze, you can make it while the cake cools. In a medium bowl, whisk tahini, maple syrup, and warm water until it is a pourable consistency.
Let it cool for 30–40 minutes. Top it with ½ cups of fresh whipped cream, 2 tablespoons of icing sugar, orange zest, orange segments, and pistachios.
