PANEER WATERMELON SALAD

Ingredients

½ seedless watermelon, cut into bite-sized cubes

1 block Nanak paneer, cut into cubes

1 shallot, thinly sliced

A handful of fresh basil leaves

1 teaspoon salt

½ teaspoon red chilli powder

2 - 3 tablespoons cooking oil

Dressing

2 tablespoons olive oil

1 teaspoon honey

2 tablespoons lemon juice

½ teaspoon red pepper flakes

Salt and pepper, to taste

METHOD TO PREPARE

Place the paneer in a bowl of warm water for 10 minutes.

Meanwhile, make the dressing: combine all dressing ingredients in a small jar, shake well, and set aside.

Drain the paneer and toss with salt and red chilli powder until evenly coated.

Heat the cooking oil in a large non-stick pan over medium-high heat. Add the paneer cubes and cook, turning often, until golden and crisp on all sides (7 - 10 minutes).

Remove paneer from the pan and let cool slightly.

To assemble, combine watermelon, paneer, shallots, and basil in a large bowl. Drizzle with the dressing, toss gently, and serve.

Notes

If making ahead, keep the dressing separate and toss just before serving to prevent the watermelon from releasing too much liquid.
