TANDOORI GOBHI TIKKA

Ingredients

1 medium cauliflower (cut into medium florets)

½ cup Nanak Dahi

1 tsp Kashmiri chili powder

1 tbsp tandoori masala

1 tbsp roasted besan (gram flour)

1 tbsp ginger garlic paste

1 tsp crushed kasuri methi

½ tsp salt (adjust to taste)

2 tsp melted Nanak ghee

METHOD TO PREPARE

In a mixing bowl, combine dahi, Kashmiri chili powder, tandoori masala, ginger garlic paste, kasuri methi, salt, roasted besan, and ghee to make a smooth marinade.

Add the cauliflower and mix gently until all florets are evenly coated.

Cover and refrigerate the mixture for at least 30 minutes to marinate.

Oven method
Preheat the oven to 400°F.

Arrange the marinated florets on a greased wire rack over a tray.

Roast until slightly charred and cooked through, turning once and brushing with ghee during cooking.

Air fryer method
Preheat the air fryer for 2 minutes at 380°F.

Place the florets in a single layer in the basket. Drizzle ghee on the florets.

Air fry until golden and cooked through for about 8-10 minutes or as needed, shaking once and brushing with ghee halfway.

Serve hot with green chutney.
