The Best Ever Vegetarian Chili

Ingredients

1 tikki paneer grated or crumbled⁠

2 tbsp vegetable oil⁠

2 red onions diced ⁠

4 cloves garlic - minced ⁠

1 tbsp ginger -minced ⁠

2 carrots cut in rounds ⁠

2 Bell Peppers (red & green) diced⁠

2 small zucchini cut in half rounds⁠

3 tbsp tomato paste (or 1 small can)⁠

1 can tomato sauce⁠

1 large can whole tomatoes (crush with hands)⁠

1 cans kidney beans⁠

1 can Pinto beans ⁠

2 tsps chipotle powder⁠

1 tsp cumin powder ⁠

2 tsp oregano ⁠

1 tsp black pepper ⁠

METHOD TO PREPARE

Sauté garlic ginger & onions in oil.

Add carrots, & sauté for 3 minutes.

Add tomato paste and mix well.

Stir in crushed whole tomatoes & Paneer.

Cook on medium-high for 2-3 minutes.

Add zucchini & bell peppers, then all dry spices.

Stir in kidney beans & pinto beans.

Let simmer on medium-low for 5-7 minutes. ⁠

Serve warm with garlic bread & enjoy! ⁠
