TRI FLAVOURED KHARVAS
1 ½ cups Strained Nanak Dahi (strained using a muslin cloth for a few hours)
1 cup Whole Milk
¾ cup Condensed milk
½ cup Milk powder
1 tbsp Cornstarch/Arrowroot Powder
½ tsp Cardamom powder
7-8 Threads of Saffron, soaked in 2 tbsp Warm milk (for saffron flavor)
1 tbsp Rose syrup (for rose flavor)1 tbsp Paan syrup (for paan flavor)
Slivered pistachios & dried rose petals (for garnish)
METHOD TO PREPARE
Strain Nanak Dahi using a muslin cloth lined into the strainer with some weight on top for 3-4 hours to remove excess water.
Whisk the strained dahi using a hand blender or whisk until smooth and lump-free, along with milk, condensed milk, milk powder, corn starch, and cardamom powder
Split the mixture into three equal portions.
Add saffron-soaked milk in one bowl for a golden saffron flavor.
Mix rose syrup in the second bowl for a pink rose flavor.
Add paan syrup to the third bowl for a green paan flavor.
Pour each flavored mixture into separate greased steaming bowls. Cover bowls with foil and place in a steamer. Steam for 18-20 minutes on medium heat.
Once done, let it cool completely, then cut into squares. Garnish with slivered pistachios and dried rose petals before serving.
